Earlier this week, I was thrilled to be able to share wisdom from my friend Kanchan Koya, who is the author of Spice Spice Baby and a passionate advocate for incorporating ancient, health-boosting spices into munch meals.

Today she’s sharing a gorgeous recipe from her cookbook that’s perfect for a summer weeknight dinner for the whole family.

I try to incorporate one fish recipe into each Munch Menu, despite it being tricky for some kids. In Munch Menu V5, I shared my personal hack for using breakfast cereal as a crispy coating. And more recently in Munch menu V8 I shared my other favorite: adding a spoonful of sugar (or fruit) to help the seafood go down.

Kanchan’s recipe uses spices on the fish and in the mango salsa to add depth of flavor, and they pair beautifully with the citrus and sweetness from the mango. It’s truly an ideal munch meal and one the adults will enjoy too.

Read on for the recipe and make sure to pick up a copy of Kanchan’s incredible book Spice Spice Baby! Code MUNCH will get you 10% off. You can also subscribe to her incredible Substack!

The full recipe is below for paid subscribers, including an easy-to-save/ print PDF and notes on:

  • Tip for meal prepping some elements

  • Other fruit you can use

  • How to make this a meal for the whole family

  • “Same same but different” variations to keep your critters on their toes

I adore fruit with fish and meat – mangoes with salmon, peaches with pork, prunes with chicken, pears with lamb, and so on. The spice, citrus, and chili are the bridge between the fruit’s sweetness and the meat’s umami flavors. The results are scrumptious. Try and get your hands on fresh, ripe mangoes for this dish, but thawed frozen fruit would be an acceptable solution.
