Ginger-Pear Overnight Oats

Plus, what happens when I travel solo (sans munch)

I am not usually the parent who travels a lot for work, but this past month I have taken two trips to the west coast and suffered the consequences.

It was about a year into my munch’s life when I took my first multi-night trip away. I figured she would be too young to be make too big of a fuss. My friends always said that it gets harder as they get older and are capable of telling you that they hate you.

Well, all I can say is that after I returned, my child told me she hated me in a myriad of different non-verbal ways.

My husband went away for a week and returned to open arms. I, on the other hand, was punished.

I don’t feel guilty for the time I spend away. It’s necessary for my work and my sanity. But it does have a gutting effect when I know that my child is feeling a sting of abandonment I can’t help. The gender divide on this might not be fair, but for her it is real.

I’d love to hear from other moms out there how you navigate this, whether it’s with a countdown calendar, hidden notes or gifts. What’s clear is that I need to up my game, because the stuffed capybara I returned with last time didn’t fully cut it.

The one thing I can control is making sure that my little fam feels taken care of while I’m away, and one small way to do that is to have breakfast already made and waiting in the fridge for the morning shift.

My munch is obsessed with oatmeal, specifically overnight oats (though this baked oatmeal is a close second). I make it slightly different week to week depending on what fruit is in season, but the recipe I’m sharing below for paid subscribers is my go-to formula. It has chia seeds for added fiber, along with nut butter (I like to use a 7-nut and seed mix for maximum diversity!). I’ve included some other ideas for nutrient boosters below too.

This week’s topping is a ginger and cinnamon laced pear compote. It doesn’t have any added sugar, but when cooked down for a few minutes, it gets syrupy like an apple pie filling.

Pear is such an underappreciated fruit, so if your munch is into apples but hasn’t honed their pear game, I suggest you give this oatmeal a try! It’s quite convincing.

If you’ve been in a rut in the morning, I’ll also remind you that I created this breakfast planner with a robust game plan PDF, which includes 4 recipes, storage and freezing instructions, a 2-week meal prep schedule, and detailed instructions for the morning of. This recipe can be rotated in for the other overnight oats!

Happy munching!

Phoebe
